Lavender Fig Spritz
2 cherry plums
1 tsp. sugar
1 oz. water
½ oz. fresh lemon juice
¼ oz. of honey
Splash of club soda or sparkling water
1 > Muddle figs, plums, lavender seeds, sugar and water.
2 > Add honey and lemon juice and shake over ice.
3 > Strain over glass filled with ice. Top off with club soda and garnish with a fresh fig slice, honeycomb and lavender stem.
Make a lavender fig simple syrup by combining water, five figs, lavender buds or seeds, and sugar. Boil for about 15 minutes,until it turns to a thick simple syrup. Then boil cherry plums with water and sugar to create the cherry plum simple syrup.

2 oz. Duke and Dame Salted Caramel Whiskey
1 oz. pineapple juice
¼ to ½ oz. lemon juice
1 > Add all ingredients except ginger beer to a shaker tin with ice and shake until well chilled. Strain into glass over fresh ice.
2 > Top off with ginger beer and garnish with pineapple leaves and a dried lemon wheel.
