Adam Hyatt, the new executive chef at Tampa’s Epicurean Hotel, has been the executive chef at Steelbach inside Armature Works, HEW Parlor & Chophouse at the Fenway Hotel, the Platt Street Borough, and worked under superstar chefs like Roy Yamaguchi. But his culinary journey really started when he was 9. Hyatt had pretended to be sick in order to get a day off from school and after seeing a chef make a cheesecake on TV, he decided he would try to mimic the recipe.
His family tried his handiwork after dinner that night, and the rest is culinary history. “To this day my mom says it was the best cheesecake she ever had,” Hyatt says.
Now, Hyatt is bringing that passion for food to the new menu at Élevage SoHo Kitchen & Bar, Epicurean’s signature restaurant. Élevage fuses ingredients and flavors from around the world, all with a focus on freshness and innovation. While some favorites stick around — like butcher cuts inspired by sister restaurant Bern’s — menu offerings change often to help guests fall in love with new dishes and tastes, from chicken milanese to grilled Maplebrook lion’s mane pappardelle. “We want to be known for an ever-changing and evolving menu full of technique, flavor and some surprises,” Hyatt says.
“From the people who only eat out on special occasions to the passionate at-home cooks that like to study cookbooks and watch food TV, we are determined to impress and be everyone’s favorite place to go for a nice meal and day or night out,” Hyatt adds.
